I don’t know about you, but I LOVE this time of year! Even if it rains or snows, I’m lovin’ this holiday time to spend with friends and loved ones.
Every year I get out my old recipe for what my family calls, “Ethel’s Candies”. When I was a young mom in 1976, we visited my next door neighbor, Ethel, and her husband, Walter for an open house. She made these treats and I have tweaked the recipe several times to make this version. I make them EVERY year, my boys LOVE them and can’t wait for me to make them. (Son #2 had a grin as wide as my arm when I handed him a small container at church yesterday.)
The recipe is very easy, so here it goes:
“Cindy’s Candies via Ethel”
1 cup coconut
3/4 cup smooth peanut butter
1/2 cup confectionary sugar
1 cup chopped nuts (walnuts or pecans)
1 cup pitted dates/ chopped (Do not use the prechopped, they aren’t as sticky.)
12 oz semisweet pieces
Mix all the ingredients except for the semisweet pieces. (You will need to use your hands, it is very messy.) Form into walnut size balls. Melt the semisweet pieces in a fry pan over very low heat until melted. Using 2 spoons, coat the balls and place on wax paper. Let cool in the frig. This makes about 16 balls.
Now I do admit I triple the recipe and freeze them. They are that good!
